Mini Cupcakes for Two! (Or one, if you're like me.)

There are times when all I want is a cupcake, and I want it now. At the same time, though, there it no way I have the time, patience, or the room space to bake a whole batch. So what do I do? I make just two cupcakes! I didn't really feel like going through the whole process of baking something in the oven, though, so I used my AWESOME mini cupcake maker. I actually got it at a garage sale- I know, ew, right? BUT, I was able to find it completely unused and unopened for $20, so I went against my normal no-kitchenware-at-garage-sales rule and bought it, and boy, am I glad I did! With seven cupcakes in seven minutes, I'm pretty sure it's the steal of a lifetime.


Enough with that, and on to the cupcakes! Using my normal recipe for two cupcakes only, I just put the batter into my mini maker instead of the oven, and it evened out perfectly into four minis.

Recipe for a small batch of chocolate frosting:
Heaping tbs cocoa powder
1 tbs room temperature butter
3 tbs powdered sugar
1 tsp milk/cream
tiny pinch of salt
Whisk all together and slather on top of the cupcakes!

5 Minute Microwave Fudge!

While not my regular fudge recipe (to be posted later!), this recipe is ridiculously easy. It literally takes you less than five minutes!
Sorry I don't have a picture of the finished product, by the way- it was eaten almost more quickly than it was  made.

(Healthy! For once!) Banana Pancakes



Now, I know I can't really say a whole lot, considering that this is only my third post, but I'm going to be honest here- my cooking is hardly in the style of "healthy." I like my comfort food and my sugar, and my blog is mainly a reflection of that.
However, here's a nice change! These banana pancakes are pretty healthy! (Until you load them with syrup, that is.)
I apologise for the less-than-quality pictures, but I was on a time restraint and didn't have time to get the lighting better.

These aren't quite your average pancakes (they're a little bit gooey), but they're pretty good if I may say so myself.

Lemon Bars



Okay, I'll be the first to admit: lemon bars are NOT my favorite. However, this recipe looked too good to be ignored, and after lemon bars were requested for an upcoming church event, I could put it off no longer. So here it is: My take on lemon bars!

Reese's Bars





Today, I made some Reese's peanut butter cup knockoffs- in bar form! Super easy to make, super easy to eat, and before you know it, they'll be gone. Just be careful not to eat them all in one sitting; it's tempting, I know.
