Microwave Chocolate Chip Cookie


Super easy microwave chocolate chip cookie in a mug!? That's my kind of cookie!

Ingredients:
-1 tbsp butter, melted
-1 tbsp white sugar
-1 tbsp brown sugar
-couple drops of vanilla
-pinch of salt
-1 egg yolk
-1/4 cup flour
-2 to 3 tbsp chocolate chips 

Directions:
Mix everything together in a coffee mug. Microwave for about a minute. Wait until cool (it'll be tempting to eat it before, but it's SO hot) and then enjoy.

Red Velvet Brownies

Ingredients:
Brownie:
-1 1/2 sticks unsalted butter, melted
-1 1/2 cups sugar
-1 1/2 tsp vanilla
-1/3 cup cocoa powder
-pinch of salt
-1 1/2 tbs red food colouring
-1 1/2 tsp vinegar
-3 eggs, lightly beaten
-1 heaping cup flour
Top:
-powdered sugar

Directions:
Preheat oven to 350°F. Mix everything together minus the eggs and flour. Beat the eggs into the mixture, and then fold the flour in. Pour batter into greased brownie pan. Bake for 30 minutes, or until a toothpick inserted into the centre comes out clean. When cool, lightly dust the top with powdered sugar, then cut and serve.

SUPER EASY Gluten-Free Peanut Butter & Nutella Cookies

I sure wish I had these when I was on my gluten-free diet last year; it certainly would've made things a lot easier! These are absolutely delicious, whether you're specifically looking for gluten free recipes or not, and SO SO SO easy!

Ingredients:
-2/3 cups peanut butter (you can do creamy, but I prefer having a little bit of crunch in my cookie)
-1/3 cup Nutella (or off-brand, either works)
-1 cup sugar
-1 egg, lightly beaten
-1 tsp vanilla

Directions: 
Preheat your oven to 350°F. Mix all ingredients together, then drop in tablespoon-sized balls onto your cookie sheet. Bake for about 10 minutes. Makes about 15 cookies.
Note: They'll look unusually spread out because there's not flour, but don't worry - they're supposed to do that. Also, apologies for the bad pictures; I didn't bother to do anything with the bad lighting in the kitchen.
